(e.g., corn syrup or cane molasses). Salt can also provide
some humectant activity, but to a limited degree before we
influence water intake by the animal.
For mold inhibition, the gold standard is potassium sorbate.
The parent compound in this ingredient occurs in nature, but
today it is produced via chemical synthesis. We can also use
organic acids like calcium or sodium propionate to inhibit
mold growth, but these are synthetic and are limited in their
application by flavor and aroma. The natural alternatives
would include acetic acid (vinegar; an organic acid), and
more recently fermentates that are derived from lactic acidproducing organisms grown on carbon sources such as whey
and dextrose. While a reasonable option, they are required at
tenfold the concentration to provide suitable control.  

Oxidative degradation
Oxidation is primarily an issue of lipid (fat)
degradation. This applies to the fat sources added to
the diet and the degradation of their fatty acids, some
of which are dietary essentials (e.g., linoleic acid). The
fat-soluble vitamins (e.g., vitamin A, D, E) are also
affected. As these compounds degrade, the secondary
products themselves (e.g., aldehydes) may be harmful
to the animal and at a minimum will erode the
texture, flavor and aroma of the product resulting
in a classic case of rancidity. Vacuum packaging and
flushing with inert gases (e.g., N2, CO2), along with
high-barrier packaging, can reduce oxidation.

However, in standard packaging, this prevention is
not possible for kibbles and baked treats without the
use of some preservatives. Antioxidant chemicals can
help retard oxidation in order to extend shelf life. The
synthetic antioxidants such as BHA, BHT, ethoxyquin, propyl gallate and THBQ are well-recognized
for their efficacy. These are generally small phenolic
molecules that work by resonance delocalization to
inactivate the unpaired electrons that initiate and
promote autoxidation.
Other compounds that aid this retardation serve
as chelating agents (e.g., phosphoric acid) to sequester
the transition metals (e.g., Fe and Cu) that lead to free

radical production, and emulsifiers (e.g., Tween 80)
to improve the antioxidant activity at the water-lipid
interface. Natural options exist such as the mixed
tocopherols, green tea extracts and rosemary extract.
It commonly requires 10x the mass for the natural
antioxidants to achieve a reasonably close level of
activity to that of synthetic preservatives. Further, it
