limited shelf-life (~6 months) under
cool, dry storage.

Definitions of "coconut
meal"
There are two definitions for
coconut meal based on these
processes: one for a mechanical
extracted (71.60) and the other for
a solvent extracted (71.61; AAFCO,
2019 Official Publication). They
state that "coconut meal is the
ground residue which remains
after removal of most of the oil
from dried meat of coconuts by
mechanical extraction process (or
solvent extraction process). It may
also be called Copra Meal."
There is no standard of identity
for coconut meal and commercially available sources vary greatly
in composition due to growth,
harvest and processing conditions.
As an example, one supplier's
specification for coconut flour was
16% protein, 20% fat (mostly as

saturated) and 37% total dietary
fiber (TDF) with incidental levels
of minerals or vitamins. The U.S.
Department of Agriculture (USDA)
Nutrient Database reports one
commercial data set for Coconut
Flour (45022923) as 18.8% protein,
21.9% fat and 31.2% TDF.
